
Darn, I missed the note with a pic for the fish competition before I started eating it lol.
Poached salmon with a Greek salad.
I made a dressing with some Dijon mustard, oregano, olive oil, lemon juice and lemon zest, one clove of garlic and salt and pepper. Then chopped up a bunch of veg, threw in some oil cured olives and some canned artichoke hearts in brine.
The salmon I kept it simple and cooked it in about an inch of simmering water with some salt, black pepper and red pepper flake for about 5 min. This was the first time I made salmon this way and I have to say it was tasty (also less messy than sautéing or broiling it).
The Mediterranean Diet is celebrated for its emphasis on whole, nutrient-dense foods like fruits, vegetables, whole grains, legumes, and healthy fats from olive oil.
